@erin – I usually only take the skin off when I’m going to flour/bread the eggplant b/c I feel like the skin keeps the flour/bread from sticking to the sides. Try it out with the skin on and let me know. It’s got a nice mildly smoky taste.

@heavenly housewife – I just made real lasagna for the first time over the holidays. I was intimidated as well but it was actually pretty easy. Just put a little olive oil in the water when boiling the noodles so they don’t stick.

@deana- thanks! that’s exactly how my husband described it. he’s still talking about it three days later, which is how I know its a keeper!

I am so going to use this. I have never made lasagne. It intimidates me, but the fact that there are no noodles to get “just right” i think this is perfect for me.

I love the idea of using bread. I’m also intrigued that you left the skin of the eggplant on. I’ve never done that when I cook with it but next time I definitely will. It makes it so much prettier. There are so few purple foods. I always feel sad when I take away an eggplant’s lovely purple coat.
