Manic Monday – Menu Planning


Almost every weekend, we go through some combination of farmer’s market, local market, FreshDirect shopping.  I make mental menus of each day’s meals.  Having Surya home during the day means my menus also have to take into account her lunch.  We don’t always stick to the menus I come up with – because invariably life/work/cravings get in the way – but it helps keeps dinner (and lunch) on track.

So here is this week’s menu:

Monday: Laukhi (Squash) kofta balls that I made tonight from India: The Cookbook (i.e. the biggest Indian cookbook ever) in some sauce to be determined. Any suggestions? Has anyone else cooked out of India Cookbook? I made the koftas tonight, and it was my first recipe. They are delicious – creamy and soft squashy-fresh inside with a crunchy exterior.

Tuesday: Sunday night leftovers – sambar and a sweet and mildly spiced chayote squash kura (stir fry) with rice.  For Sunday’s dinner, we tried the dosa batter they sell readymade in the freezer section of the Indian grocery store. It was pretty good, so we’ll finish it off with the other leftovers.

Wednesday: Homemade gnocchi that my brother made, froze and then lovingly packed for a drive back from Boston.  We’ll probably have them with some sort of salad.

Thursday: Tofu and veggie stir fry in red curry coconut milk.

Friday: Home to my parents to celebrate their 40th anniversary and Mother’s Day!

  1. Menu looks quite interesting. I’m so poor at planning menus for the week. I tried once, but never could stick to it.
    Just placed a request for The Indian Cookbook from my local library. Will check it out and let you know what I liked. Enjoy your week.

  2. Did your sweet brother remember his OTHER sister?
    Or is he planning on lovingly freezing and packing gnocchi to bring this weekend?
