Simple Peanut Sauce

June 19, 2011

A great simple sauce uses pantry ready ingredients that you’re bound to always have on and imparts a deliciousness with layered flavors that masks it simplicity.  We all have a few of these up our sleeves.  Sometimes they are so simple though that I forget them. There’s a great sweet and sour Indo-Chinese sauce we’ve been making on weeknights and then this peanut sauce which has also been a lifesaver.

Simple Peanut Sauce

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

This peanut sauce recipe makes about 2 cups of sauce. You can substitute peanut butter (chunky or smooth) for the peanuts and add a tablespoon of ketchup for a little extra sweetness. Coat some buckwheat soba noodles and crisp veggies with this peanut sauce.

Ingredients

  • 1 cup roasted peanuts
  • 1-2 tablespoons Thai red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon chili garlic sauce
  • 1 cup vegetable broth
  • Cilantro, chopped
  • Salt to taste

Instructions

  1. Blend the peanuts in a blender or food processor with a tablespoon of water.
  2. Transfer to a small saucepan and whisk in the red curry paste and soy sauce.
  3. Add the brown sugar and vegetable broth and cook on medium-low heat for about 10 minutes.
  4. Add the chili garlic paste, cilantro and salt.
